While swapping over the body on the 7, I would like to put new body mount bushings in. I have been told that you have to use special bushings and cannot have any body lift.

Is this true?

If not, what have people done?

I'm not sure but I believe it can be done. Does the tub mount with lag bolts? If it does then you simply need longer bolts. Or this would probably be the better way is to take a piece of square tubing or channel iron equal to the thickness of body lift you desire. Drill for the original body mount and weld it to your outriggers on the frame.
